My Spanish Rice with Salmon! is a great dish for the entire family to enjoy. This dish is packed with flavor that will have your home smelling deliciously good. A couple of weeks ago I was in the store walking aimlessly through the aisles. I walked through the “Asian Foods”, and thought “why not try something new?” I have been in my comfort zone lately with foods so I decided to spice things up. I turned my cart around, and found myself in the “Latin Foods”. I didn’t know what I wanted. All I knew is that I wanted something different. Thats when I found Chonchita’s Spanish Rice. It was placed in a corner labeled “Cuban Favorites.” Now, I’ve never been to Cuba, and I don’t know if this is a favorite. But I did have fun making this dish while drinking some Costa Rican coffee. My home was filled with wonderful scents!

I didn’t add measurements to this recipe. Everyone has different preferences, and this recipe has all it needs just in the rice.
I began by dividing the salmon, and covering it with olive oil. I then seasoned it with garlic, salt, and pepper. As you can see in the photos, there is no limit on garlic in my home. We love garlic! I let the garlic cook at a low/medium temperature so it wouldn’t dry out. While the salmon was cooking I started on the rice. I followed the instructions on the package, but added sweet peppers to the mix. Once the rice was well enough to be left alone I turned on the oven. I lightly covered my skillet with olive oil, and left it inside the oven at 200°F. Once the rice was done I turned the oven on to 350°F . I moved the rice onto the skillet trying my best to evenly spread it. Then I moved the salmon ontop of the rice and added capers for flavor. I baked the rice for another 25-30 minutes. When it was finished I served with avocado!
